ABOUT THE WINE 2005 VINTAGE
|
The grapes for the Grasso Cabernet Sauvignon are grown on a 3-acre plot and is located in the Grasso's estate compound in Napa Valley. The vines are meticulously groomed and cared for by Frank Grasso to ensure the highest quality. Its not a secret, Grasso said, a great wine starts in the vineyard. After several years of producing premium Cabernet Sauvignon grapes for a large Stags Leap winery, Frank Grasso seized an opportunity to start his own label. Im putting 15 years of experience for my own label, Grasso said, after all a great wine starts in the vineyard.
2005 was a unique year Napa Valley experienced a wet spring, a cool summer, and no heat spikes during September. Although the cool weather slowed ripening, it allowed longer hang time that created a fully ripe vineyard with great cabernet flavor concentration.
On October 31, 2005 when the leaves began to yellow and fall, approximately 10 tons of grapes was handpicked under the watchful eye of Frank Grasso and his Winemaker, Jay Buoncristiani. Prior to harvest Frank and Jay walked the vineyard every few days, tasting and evaluating flavors and pit/skin colors.
The wine is unfiltered, 100% Cabernet Sauvignon, aged for 19 months in tight grained French and Hungarian oak. Jay orders all barrels, specifying the toast and cooperage. To ensure the highest quality, Jay personally does all racking of the wine. 525 cases were bottled on June 29, 2007
